From hive to bottle
01 · The honey
Every batch starts with a single honey — wildflower, clover, or buckwheat — from apiaries we visit in person. No flavorings, no concentrates, no "natural flavors." The label tells you the farm and the season.
02 · The ferment
Mead ferments at its own pace and we let it. Small batches rest in stainless or neutral oak until the honey resolves — some for six months, our oaked flagship for over a year.
03 · The bottle
Every bottle carries the batch date, the honey source, and the signature of the maker who racked it. Mead this honest shouldn't be anonymous.

The taproom
The taproom is where the experiments live — cask-only batches, vertical flights of the same honey across vintages, and a cheese counter that knows what Dark Comb wants next to it.

Curious newcomers
Only if it’s made that way. Our flagships finish dry to off-dry — closer to a white wine’s tension than a dessert. If you like Riesling, sour beer, or amaro, there’s a pour here for you.
Slightly cool, in a wine glass. The taproom pours flights so you can find your lane before committing to a bottle.
To 38 states, yes. An adult 21+ signs at the door. Some states restrict quantity — the shop shows exactly what’s allowed at your address before checkout.
Mead is naturally gluten-free — it’s fermented honey, not grain. We add no sulfites in most batches; any exception says so on the label, in plain words.
Yes — the barrel room seats 30, and we pour off-site events within 100 miles with TTB-permitted catering. Tell us the date early; Saturdays go first.
